    DO NOTE this doesn't work well with oily fish, such as salmon or tuna among others.

    The claimed shelf life is up to three years. YMMV

    The process is simple but time consuming and you need low humidity because the salted fish must dry naturally in a low temperature environment.

    I see no reason that a food dehydrator, set for lowest temperature, will not work in the final drying stage.
